With Saint Patrick’s Day around the corner, like any other holiday throughout the year, dessert is a must. Unlike other special festivities like Christmas and Thanksgiving, St. Patty’s Day does not include many commonly known traditional cakes, cookies, or pies for some people. This green themed recipe combines delicious brownies, with a minty whipped topping to create a frozen treat that’s sure to make this year’s celebration feel even luckier and make any leprechaun want to trade you his gold.

Ingredients
1 package brownie mix (make as directed on box: eggs, water, and oil usually needed for mix)
1 can (14 oz.) sweetened condensed milk
2 teaspoons peppermint extract
4 drops green food coloring
2 cups heavy whipping cream (whipped)
½ cup miniature semisweet chocolate chips
1 jar (16 oz.) hot fudge topping (optional)
Directions
Brownies
1) Preheat oven to 325 degrees and grease 13” by 9” pan.
2) Follow directions on brownie mix. Combine eggs, water, and oil in bowl. Stir in brownie mix.
3) Pour into pan and bake in oven for 22-27 minutes or until a toothpick inserted comes out clean.
4) Let cool completely on wire rack or in refrigerator.
Mint Cream
1) Meanwhile, whip heavy whipping cream with whisk until fluffy (consistency of whipped cream).
2) In a large bowl, combine sweetened condense milk, peppermint extract, and green food coloring.
3) Fold in whipped heavy cream and the chocolate chips.
Combining
1) Spread Mint Cream on top of cooled brownie.
2) Let freeze in freezer for 3 hours or overnight
3) Remove from freezer and ENJOY!
All in all, the recipe turned out great though if mint is not your favorite flavor try putting in a smidge less peppermint extract. A tip, be sure to let the final product thaw a few minutes for easier cutting. Also, for toppings try serving with hot fudge topping and/or salted peanuts. This treat is definitely one worth trying this Saint Patrick’s Day!
